The world of coffee has gone through a huge transformation in recent years. While deep, bitter and smoky flavours used to dominate, today the choice is far more nuanced and exciting. When we stand in a café or in front of a shop shelf, one of the most important questions that comes up is: does light or dark roast coffee suit our taste better? The answer lies not only in our personal preferences, but also in what we expect from a cup of good coffee.

Dark roast coffee is the cornerstone of classic Italian coffee culture. In this roasting process the coffee beans are roasted for longer and at a higher temperature, which brings the natural oils to the surface of the whole beans.
The resulting drink is full-bodied and bitter, often with notes of dark chocolate, roasted hazelnut or smoke. In this case the flavours of the roasting process overpower the bean’s original, fruity character, giving a very intense, familiar experience.
Light roast coffee, on the other hand, stands for a completely different philosophy. Here the roaster’s aim is to preserve the bean’s original, terroir-dependent qualities. With quality, 100% arabica coffees, the shorter and gentler roast means the result is not bitter but complex and distinctly fruity.
With a lighter roast the coffee’s natural acids are preserved, so you can experience an excitingly acidic, floral or even berry-like flavour profile.
This is especially true when a light roast specialty coffee ends up in your cup. With these lots the texture of the finished drink is often lighter, clean and translucent, which is why the experience is often more reminiscent of the complexity of a fine tea than of a heavy, dense black coffee.

Of course, there is also a middle ground between the two extremes. Medium roast lots strike a great balance: they keep the fruity and sweetish notes while already showing the pleasant, caramel-like body that roasting brings. For many people this is the perfect choice at home for everyday mornings.
